Sweet capocollo is a cured piece of pork meat. It is prepared by maturing the part of the animal's meat called "capocollo", massaged with salt and natural and excellent quality spices, it is stuffed into natural pork casings so that when cut it is compact, with an intense red color and pinkish white. It is tied with hemp twine and left to rest in smoking environments.
For a period of 90 days they are matured in a dryer.
